I think that it depends... because there are differents possibilities...

1. if you have a monograhy in different volumes, and there is a general
titlefor all of them, but no specific title for each of them (just volum I,
volum II, ...), I use only one notice and in the physical description I put
the number of volumes.: 2 vol. 3 vol. etc.
this is perfect for encyclopedias, and I think it's quite clear for users,
then in the exemplaires fields I have created an specific field for
information about the exemplaire, and I put there if it is the volume I or
the III.

2. if there is a general title, and each volume has specific title then you
have 2 possibilities:
2.1 if the specific title has enough sense by itself, I make a notice for
every volume, and as Florent has said, I put the general title in the
"serie"field,
2.2. if the specic title hasn't enough sense by itself or it result confuse,
I make only one notice, and then I use the "containt" note

I think these are the most usual possibilities, of course not the only
ones... 

Some time ago I met a librarian that used to tell me (when I had problems
cataloguing some books) that the most important was to put all the
information, no matter the way, but in order to allow the users to find that
book.
